61 PROJECTS INITIATED OR APPROVED IN 2017 Optimization of storage conditions for cheese starter cultures Cheese starter cultures are used to initiate cheese production and have a significant impact on the product’s properties. This project studies the technical conditions for the production and storage of cheese starter cultures and analyzes microbial populations using molecular biology techniques. Principal Investigator: Carlos Sanguinetti Funding: National Agency for Research and Innovation (ANII) and Jucar Duration: 24 months Optimization and control of content delivery and cloud computing systems In IT systems, the current trend is toward the provision of distributed services in data centers that share the costs of utilizing hardware resources among different clients. This shift toward cloud computing is made possible by the evolution of global connectivity services. The objective of this project is to contribute to the theory of scalable capacity systems dedicated to managing tasks with specific requirements for uptime and energy consumption, using applied mathematics tools such as fluid models, optimization, and control. Principal Investigator: Fernando Paganini Funding: National Agency for Research and Innovation (ANII) Duration: 18 months Automation of control and maintenance of production parameters in a 3-liter fermenter The Biotechnology Laboratory created a low-cost prototype of a fermenter, one of the crucial pieces of equipment for the research it conducts. This project, in which Systems Engineering students Mauricio Cousillas, Renzo Scuadroni, Diego Medina, and Martin Osimani are participating, aims to automate this prototype to maximize the use of the data obtained.
